Sago-Moong dal Upma

Ingredients:
Sago - 1/2 cup
Moong dal – 1/4 cup
Onion – 1/4 cup
Red chilli – 2 no
Curry leaves – 1 strand
Mustard seeds – 1/2 tsp
cumin seeds - 1/2 tsp
Carrot (grated) – 2 tbsp
Raw mango (grated) – 2 tbsp
Cashew nuts – 5 nos
groundnut - 10 no.s
Ghee – 2 tsp
Salt – 1 tsp
Method
1.. Soak the sago in water at least 2-3 hours and drain the water completely.
2. Roast the moong dal and soak in water until soft.
3. Heat ghee in the pan and add mustard seeds, when the mustard seed starts to splutter, add cumin seeds, cashew nuts, groundnut, broken chilli.
4. In a kadai, heat ghee add onion, curry leaves, carrot, raw mango and fry for a minute.
4. Now add the moong dal and cook until soft and they are mixed well.
5. To this add cooked sago and salt. Mix well.
6. Switch off the flame and serve hot.
Nutritional highlights – Moong dal is rich in protein, potassium, iron and calcium. Coconut is rich in fiber and provides essential fatty acids. It also has antibacterial, antiviral and anti-fungal properties. Ghee and cashew nuts provides calories and essential fatty acids. Curry leaves are rich in vitamin A and calcium. Carrot is rich in vitamin A.
