Potato Paddu

Ingredients:
For the stuffing:
Potato -2 medium (boiled, peeled and mashed)
Fresh peas- 3 tablespoon (boiled)
Carrots - 2 tablespoon, finely grated
Coriander leaves - 1 tablespoon
Salt to taste
Hing a pinch
For the batter:
Besan- 1/2 cup
Red chilli powder- 1 tsp (optional)
turmeric powder - 1 tsp
cumin powder- 1 tsp
Hing- a pinch
Salt- to taste
ghee - 2 tbsp
Method:
1. In a bowl mix all the ingredients of stuffing.
2. Make lemon sized balls out of the mixture.
3. In another bowl mix all the ingredients of batter adding water to bring it to thick batter consistency.
4. Heat a paddu/paniyaram pan. Add few drops of ghee in each depression or hole.
5. Dip the potato balls in the besan batter and put them in paddu pan.
6. Cook on both the sides till brown.
7. Serve with coconut/coriander chutney or tomato sauce.
Nutritional highlight :
Potato is a source of carbohydrates and potassium. Fresh peas is a source of protein. Carrot is source of carotene and phosphorus. Combination of these vegetables makes the stuffing colourful and shallow frying reduces the amount of oil.
